Chestnuts are quite different from other nuts, which are traditionally high in fat, calories and protein. Chestnuts on the other hand have approximately a quarter of the calories of other nuts, a high water volume, and a high carbohydrate content with low levels of fat and protein. A “real” nut has 40-55% fat content and is low in carbohydrates while chestnut flour has an estimated 1% fat and 78% carbohydrates. Therefore, Chestnut flour operates differently than other “nut” flours in recipes.
With a sweet, delicate, nutty taste and powdery texture it is perfect for baked goods and other treats. Chestnut flour pairs especially well with the flavors of chocolate, hazelnuts, almonds, and honey.
Chestnuts have a remarkable nutritional composition that sets them apart form other nuts, making them a great food source and staple food. Chestnut flour has been popular in Italy for centuries for dessert making, use in breads, porridge, jam, chestnut cream, pie crusts, crepes, pancakes, puddings, as a thickener in soups and stews, used as a breading for seafood, and is also the main ingredient in polenta.
