The pasilla, native to the Sierra Norte of the Oaxaca region, is one of Mexico’s great chilies, for both its taste and its versatility. This shiny mahogany colored chile has a unique smoky flavor and a sharp lingering heat, and is often used for chile relleno or to garnish tortilla soup.

Chile Pasilla from Mixe, a small woman-owned Oaxacan company, is produced from chiles harvested from local farmers in the Sierra Norte. The chiles are smoked in the traditional fashion over oak wood in an artesanal oven and then prepared in a mixture of olive oil, vinegar, and spices.
